My husband was the director of hotel security for a semi-famous hotel.  I say semi-famous because some haven’t really heard of it while others rave about it.  Like Patty LaBelle.  She always stays there when she’s in town.  It’s in a pretty popular part of the district, AKA Washington, DC.  It’s strategically located with lots of restaurants and shops in the area.

 

Two weeks ago, his first shift officer, H, said that he was going to work for a cable company.  Now, the hubs was trying to build this officer into his replacement, but he just didn’t step up.  He just didn’t have the maturity and dedication it takes to run that hotel security.  Case in point…

H left a nice Facebook post on his wall saying how great the hubs was to work with and how he learned so much from S.  H was scheduled to work last weekend.  But, decided after posting that on his wall to now show up for work Saturday or Sunday.  So, S got Saturday covered, but couldn’t for Sunday.  He had to go into work.  Which sucks.  All because some jerk decided to disrespect his fellow officers, be giant D, and just not show up for work.

 

This story has a good-ish ending.  Bear with me.

 

So, in order to prevent having overtime – which is paid for by the company and not the client – S arranged it so he would have Friday covered by another officer so he could have the day off.  Not to have a day off, but to keep from costing the company out of pocket.  I really would have liked to have had the day off, too, or at least tele-worked, but I couldn’t.  There were only three of us in the office who could process funds control.  Yay.  I knew I was filling in for two people, but not three.

This meant I had to take the train.  Not the Metro train, but the VRE train.  Like train train on train tracks train.  Now, I’ve gone this route a few times since we moved here.  While, usually, my nose is buried in my phone reading all the other blogs on my Bloglovin, I took a minute or three and just watched the world go by.

 

The sound of the train rolling along the rails is relaxing. 

 

This area is such a high paced, go go go environment that just sitting on the train, trudging along, is relaxing.  Watching rolling hills, stately trees, and new spring green pass by is calming.  Following the little brook that runs alongside the rails just washes all the stress of the day away.

 

Now, all of this might be believable if I was anywhere else.  But being so close to Washington, DC, it’s a bit surreal.  It’s not easy to put the two worlds together.  Not 30 miles from where I am is the hustle and bustle of the Nation’s Capital.  It’s unimaginable to put the life of DC together with this natural oasis of peace and green and new life.  It’s so difficult to put the two together in my mind, but this rail does.  These two tracks connect a crazy work life with soothing surroundings and a truly – blessed isn’t even the word.  I have an amazing husband, the best dog ever, and a gorgeous house.  Blessed isn’t even the word.

So, I sat there on the train trying to put the two worlds together and was honestly glad that I couldn’t.  The two don’t go together.  One is full of stress, frustration, and constantly being asked question after question helping person after person.  The other is full of love and happy and laughs.  It’s relaxation and smiles.

 

I know, if you’ve made it this far you’re wondering what in the world this has to do with the recipe.  Well, it’s a recipe you can whip up on days like this.  Days where you have to take the train, get home a little later, and still have to get food on the table.

By the time the pasta is cooked the chicken is cooked and then all you have to do is stir in the rest of the ingredients.  I mean, who doesn’t love a delicious, quick, and pseudo-healthy recipe on the table in no time flat?  Just look at that cheesy color!!  You can’t tell you me you don’t want to grab a fork and stab yourself a mouthful.  I do and I’m sitting here with a bowl of oatmeal typing this before work.

 

You could totally cook the bacon with the chicken in this dish. 

 

If you’re watching your cholesterol you might not.  Then again, you probably wouldn’t be using regular bacon and might opt for the turkey variety.  Sometimes I cook mine in the microwave covered with paper towels about 3 to 4 minutes depending on how many slices I have.  It’s a quick and easy way to get crisp bacon for recipes like this one.

 

And trust me when you say you will want to make this recipe.  It tastes amazing.  Even the hubs like it!!

 

How you keep your work and home life separate?  I imagine it’s even harder for those that work from home.  Can you even separate the two lives if you work from home?

Chicken Club Pasta

Chicken Club Pasta

Yield: 4 servings
Cook Time: 25 minutes
Total Time: 25 minutes

Just like a chicken club sandwich, this Chicken Club Pasta has chicken, bacon, and cheddar cheese in it. Not only is it delicious, but it's kid friendly and budget friendly.

Ingredients

  • 12 ounces chicken breast, cut into bite-sized pieces
  • 8 ounces uncooked, short grain pasta (penne, ziti, etc.)
  • 10 ounces reduced fat cheddar cheese soup
  • 1/2 cup fat free milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon poultry seasoning
  • 1 cup cheddar cheese
  • 4 slices crisp cooked, center cut bacon, chopped

Instructions

  1. Cook pasta according to package directions omitting salt and oil.
  2. While the pasta is cooking, heat a large skillet coated with cooking spray over medium-high heat. Sauté the chicken until cooked through.
  3. Combine the next five ingredients (soup through poultry seasoning) in a small mixing bowl and set aside.
  4. When the pasta is cooked, drain, and add to the pan with the chicken. Pour the soup mixture over the pasta and chicken; stirring until combined.
  5. Carefully fold in the bacon and the cheese. Allow to sit for at least 5 minutes before serving.
